WHY "IN SEASON" CUISINE?


Nutritional habits can be likened to “finger prints.” The cooking style, the spices used and the way in which different ingredients are combined transforms a single dish into a personalized experience. Some might turn their noses up at the thought of boiled vegetables whilst others will turn boiled vegetables into a delicious meal using a variety of sauces and spices. The most important aspect is to maintain a balanced and adequate diet, and to integrate this into one’s lifestyle. The nutritional value of each food is uniqueand each food has an individual function in the body. Where possible, it is important to consume food when it is in season. ‘In Season’ food is most likely to deliver optimum nutritional value.

Plant-based foods contain a wide variety of nutrients which, together, contribute towards maintaining good health. Sabri Ülker International Science Award was given to Asst. Prof. Kıvanç Birsoy, who successfully represents Turkey in the U.S.!

The Sabri Ülker International Science Award was given for the third time in line with the objective of the Sabri Ülker Food Research Foundation “to encourage research in the areas of food, nutrition, and health and scientists working in these fields.”

One of the rising stars of Turkey in the scientific world, Asst. Prof. Kıvanç Birsoy was awarded with Sabri Ülker International Science Award. Birsoy, continuing with his scientific career on the link between cancer and metabolism at the Laboratory of Metabolic Regulation and Genetics of the Rockefeller University; received the award from Prof. Brian Kobilka, the recipient of the 2012 Nobel Prize in Chemistry.

Kıvanç Birsoy is mapping the interdependence of different types of cancer with foods based on “DNA-Barcoding Technology.” This study also sheds light on the discovery of new, sustainable and economic treatment methods in the fight against cancer.
